Mole Mexican Rub is a spicy, slightly smoky aromatic blend of toasted dried chillies, traditional herbs, cocoa powder and spices. Use it as a rub or marinade for slow-smoked pork ribs or beef brisket, quick grilled fish or octopus, or to season a simmered mole sauce or stew. Flavour a compound butter to slather on steamed corn-on-the-cob or in a vinaigrette for bean and grain salads.
